WebbCornstarch would break some of the gluten and give a crisp/crumbly crust. If the butter is melted rather than creamed the cookies stay thick. Some of the sugar may dissolve quicker in the melted butter and crisp/ brown more quickly. They look kinda underbaked for me but I’m a chewy vs gooey fan.
